A banana cake recipe is a famous dessert all around the globe. Inspired by this traditional sweet originated the banana split cake recipe with banana and chocolate frosting that's not only easy to prepare, but also an absolutely delicious dessert for dinner parties.
What you will need for the banana frosting:
- 500 grams of unsalted butter
- Five (5) large egg whites
- One and a half cups of sugar
- Half (1/2) cup of mashed ripe bananas
- Half (1/2) tsp. of salt
- One and a half tablespoons of vanilla extract
- Five to eight drops of food coloring
For the chocolate frosting:
- One (1) cup of semi-sweet chocolate chips
- 1/2 cup of caramel sauce
- Two (2) tbsp. of butter
- One and a quarter cups of confectioner's sugar
- One teaspoon of vanilla extract
For the banana cake:
- Seventy grams of butter
- 1 1/2 cups of sugar
- Half a cup of confectioner's sugar
- Four (4) large eggs
- Two and a half (2 1/2) cups of cake flour
- 1 tsp of sodium bicarbonate
- Three quarters of a teaspoon of baking powder
- One cup of mashed ripe bananas
- Half (1/2) cup of sour cream
- Two (2) teaspoons of vanilla extract
Preparing the cake:
- Leave the butter to soften at room temperature.
- Heat the oven to 180C and grease a 9 inch cake pan.
- Place the butter and sugar in a deep bowl and, using a blender, beat them together until they're light and fluffy.
- Add the eggs to the mix, one by one, and mix well to get a fluid mix.
- In a fresh bowl, mix the dry ingredients.
- Add them to the egg-butter mix, spoon by spoon, and keep on beating at a low speed. There should be no lumps in the mix.
- Next add the mashed bananas and sour cream along with the vanilla extract and beat together well.
- Pour the batter in the greased cake tin.
- Bake in the oven for 35-40 minutes.
While the cake is baking you can prepare the delicious frostings.
Preparing the banana frosting:
- Combine the egg whites and sugar together and whisk them over a double boiler.
- Remove from the heat and mix some more 'til the mixture cools and doubles in volume.
- To this, add the butter and whisk until you get a smooth batter.
- Then add the bananas and vanilla extract and whisk some more.
- Add the food coloring (three (3) drops at a time) to get the ideal 'banana' coloring.
Preparing the chocolate frosting:
- Combine the chocolate chips, caramel sauce, butter and sugar in a bowl.
- Cook on low heat 'til the chocolate chips are completely melted.
- Beat the ingredients to ensure they mix well.
To assemble the cake:
- Let the cake cool completely before frosting (you can put it in the fridge for a 1/2 hour to stop it from crumbling).
- Cut the cake in three layers.
- Place the bottom layer on the cake stand and spread a generous amount of banana frosting over it.
- Place the middle layer on top of the frosting and spread the chocolate frosting over the top. It's okay if the frosting flows down the sides.
- Place the top-most layer on top of the chocolate frosting and press lightly.
- Spread the remaining banana frosting on the assembled cake and cover on all sides.
- Cool in the refrigerator for about 2 hours to let the frosting set before serving.
- Cut in slices and drizzle with chocolate sauce before serving.
