Sugar, once known as 'White Gold' has been a precious commodity for many centuries. Mexican sugar is a most important and most valuable harvested product locally in Mexico. The product output more than doubles that of the other products such as corn and other high value crops.
Averaging about 611 hectares of cane harvests, this industry employs about two and half million people just to produce the delicious sweetener from Mexico. Today's crisis has however affected it's production, and almost brought it at risk before Mexico's government stepped in. Several mills could not support themselves financially and were in debt because of the worldwide economic crisis.
A lot of mills, which produced a substantial amount of sweetener for the industry, were closed down several years ago and handed over to the government because of their debts. This was the beginning of the reorganization of the sweetening industry of Mexico. With this new order, the government has the great responsibility of maintaining this large industry of two and a half million people employed.
In addition to giving more sweet flavors to dishes, this sweetener also brings more flavor to drinks as well. The sweetener from Mexico has, however, a specialized type. This type is called Piloncillo. Piloncillo is an unrefined type of sweetener that is produced locally in Mexico.
This sweetener is not just found in desserts but also in dishes that do not seem to be sweet. They give a lot of color and dimension to dishes. They are, however not just limited to dishes and viands but also to drinks. This sweetener is widely utilized, much as people use the normal table sweeteners.
Piloncillo is a sweetener from Mexico that is known throughout the world. It is nice to know that the sweetener industry is bouncing back to its old financial stature. This Mexican sugar industry is continuously exporting to the United States with their surplus products that would hopefully add to their revenue to pay for the farmers' harvests, loans, and infrastructure.
